I’m definitely going to try this cake recipe. It sounds delicious, and it’s easy too.
Mandarin Orange Cake
1 Box butter cake mix
1/2 c Oil
3 Eggs
1 can Mandarin orange slices with the juice.
Filling: 1 med container Cool Whip
1 lg Package vanilla instant pudding
1 lg Can crushed pineapple with the juice.
Mix together cake mix, oil, eggs and mandarin oranges and juice. Make 3 layers. Bake at 375 degrees for 25 minutes. Filling: Beat filling by hand and spread between layers, top and sides of cake. Keep refrigerated. by Randy Rigg

Easy and interesting little stew you can make on a week night.
Black Eyed Pea Beef Stew
1 lb Lean ground beef
1 lg Clove garlic, minced
1 ts Seasoned salt
1/8 ts Black pepper
1 lg Onion, chopped (1 cup)
1 qt Cherry tomatoes, stemmed
15 oz Black-eyed peas
Lightly brown ground beef, in a medium saucepan. Stir in garlic. Layer onion and tomatoes on top. Pour on black-eyed peas, liquid and all. Cover and bring to a boil. Reduce heat and simmer for thirty minutes, without stirring. Stew is done when the tomatoes are cooked. Ladle into serving bowls. Makes 4 servings: each = 420 calories, 26 g prot, 23 g carbs, 24 g fat, 85 mg chol, 712 mg sodium. Calories from fat = 51%

Orange marinated chicken stir-fry with broccoli.
Sesame Chicken with Broccoli
1 c Chicken breast; skinned boned & cut into cubes;
1 c Chicken seasoning;
1/2 ts Paprika;
1 ts Ginger root; minced
2 tb Toasted sesame seeds;
1/2 c Onion; chopped
5 tb Orange juice; concentrate
1/4 c Water
1 lb Broccoli; coarsely chopped
1 Lemon;
Combine all ingredients except broccoli and lemon in bowl, cover and marinated for at least 30 minutes. Heat wok or skillet over medium high heat. Stir-fry chicken mixture and broccoli for 15 minutes or until broccoli is just tender. Do not overcook. Serve with fresh lemon wedges. Here’s an easy meatloaf recipe, assuming you can buy the meat loaf mix. Not all stores sell it, but they do sell ground pork, veal and beef separately.
Lois’s Meat Loaf
2 lb Meat loaf mix (Ground Beef, Pork, & Veal)
1 pk Onion soup mix
1 1/2 c Italian bread crumbs
2 Eggs
3/4 c Water
1 ts Salt
1 ts Garlic powder
1/2 ts Pepper
Ketchup (optional)
1. Combine all ingredients in bowl, mixing well.
2. Spray baking pan with cooking spray to prevent sticking.
3. Shape into loaf; place in pan; spread ketchup over top.
4. Bake 1 hour, *or until done* at 350oF.

This is a delicious drink, almost a smoothie kind of cocktail.
Pink Dream Cocktail
3/4 oz White creme de cacao
3/4 oz Vodka
3 oz Raspberry sherbet
3 oz Vanilla ice cream
3 oz Ice
Preparation : Blend all ingredients until thick and serve in a 7 ounce stemmed wine glass. Yield: 1 serving.
