There are so many different types of egg Foo Yung; this one uses pork, but you can just as easily replace with chicken if you prefer.

This omelet recipe looks great. A bit of work, but if you remember to make it when you already have some leftover mashed potatoes, it’s much easier. Of course no one said you couldn’t use instant potatoes.

Guacamole Omelet Recipe
1/2 Avocado; peeled
1/2 tsp Lemon juice
1 dash Seasoned salt
3 drop Hot pepper sauce
1 sm Tomato; chopped
2 Eggs
1 tb Water
